A local specialty of Guangping County in Handan City, north China's Hebei Province, Guangping “Zeng” pork knuckle has a history of 200 years. It’s cooked from a pig's entire foreleg along with its foot. More than a dozen spices including star anises, fennels and cloves, are all ground to powder in proportion and thoroughly mixed with the pork, which is then marinated for 6 hours.
It takes 12 more hours of stewing in thick soup, and you get a mouth-watering taste from the delicious pork dish.
